Chinese White Tea - Dragon Phoenix Pearl
This is our most exotic tea. Picked during April and May, only the top 2 leaves and a bud are used. They are stored until August until the most fragrant jasmine flowers are in bloom. Jasmine flowers open at night releasing their intoxicating scent. The delicate tea leaves and buds are introduced to the jasmine flowers each evening for about a week after which the flowers are discarded. The tea leaves, having absorbed the scent, are then hand rolled into tiny pearl shaped balls.

To best appreciate this exquisite tea, we recommend brewing it in the cup. Pour boiling water into a cup and allow to cool slightly. Add around ten pearls to the water. After 3 or 4 minutes the leaves will unfurl and drop to the bottom releasing their wonderful flavour and aroma.

Chinese White Tea - Silver Ice Needle
The world's rarest teas are collectively known as 'White Tea' and this example is probably the most treasured. Harvesting the leaves is a painstaking process as each leaf must be individually picked just before it opens, when it still has the white, downy coating from which it is named. This very special tea undergoes minimal processing, just steaming and drying, to avoid damaging the leaves. It is completely free of both caffeine and tannin. As this tea is so light, more leaves than usual are required.

Use 2 heaped dessertspoons per cup and steep for 6-8 minutes in 90°C water.

Chinese White Tea - Pai Mu Tan
After the highly prized top two leaves and buds have been harvested for Special Silver Needle, the remaining leaves and silver buds are picked for Pai Mu Tan. Production is the same as for Silver Needle. These virtually weightless leaves produce a tea that is both elegant, aromatic and health promoting.

Don't try to measure this tea with a teaspoon, you will need two tablespoons per cup.
