Japanese Green Tea - Gyokuro Asahi
Gyokuro (Precious Dewdrop), which many consider to be the finest green tea in the world, is produced exclusively in the famed tea gardens of Uji near Kyoto and is rarely found outside Japan. It has a deep green color and mellow, sweet taste which is the result of a special labour-intensive growing process. In late April or early May, when the first buds appear on the tea bushes, marsh-reed screens are set over the plants. As the leaves mature, more screening is added until more than 95% of the sunlight is excluded. After three weeks of growing in the shade, the leaves are plucked by hand, then steamed, dried and rolled until they resemble pine needles. The shading increases the levels of chlorophyll in the tea and reduces the bitter elements which makes for a very fresh-tasting full-flavored brew, unmatched by any other green tea.Use 1 level teaspoon per cup and steep for 2 minutes in 75°C water.
